Restaurants in our city get lettuce and herbs picked three to five days earlier and trucked in from other regions. Much of it wilts before it is used.
In winter, supply drops and prices change from week to week.

03
We grow lettuce, basil, and microgreens in stacked trays under LED lights, in a 600 m² room inside the city. The water is filtered and reused, and we use no soil or pesticides.
Customers order by the evening before through a web form. We harvest in the morning and deliver the same day.
The second room copies the first room's layout, so the setup and crop plan have already run for 18 months.
04

The first room has run for 18 months with the same tray layout and crop schedule.
Most customers order every week through the same web form.
Water is filtered and reused, and we track use per kilogram harvested.
